Debs remman (pomegranate molasses) is sweet, sour and slightly bitter at the same time. Most supermarket bottles add sugar and citric acid; ours is pomegranate juice reduced slowly until it coats a spoon.

The dressing (serves 4)

  • 3 tbsp olive oil
  • 1½ tbsp debs remman
  • Juice of ½ lemon
  • 1 small garlic clove, crushed
  • 1 tsp sumac, ½ tsp dried mint, salt

Whisk everything until glossy. Taste: it should be bright first, then sweet, then a little bitter at the end.

The salad

Romaine, cucumber, tomato, radish, spring onion, purslane if you find it, parsley and mint. Toast or fry a pita until crisp and break it over the top only at the last second. Dress generously, toss, and add more sumac on top.

Tip: keep the debs in the fridge once opened; it lasts months and goes well on roasted aubergine, grilled chicken and even vanilla ice cream.
